Basically, I'm mildly stressed as a kitchen wench on big occasions. Add to that some specific unexpected dietary quirk, and I am not a fun person to be around in the kitchen. Best give me a large glass of wine and leave me to get on with it.
If, three weeks before christmas, I had been landed with a person I didn't know, who was staying for an unspecified length of time, turning up maybe or maybe not on the 23rd, and who was vegetarian... I would not be entirely happy. I would be bitching. If it was a vegan I'd be bitching worse.
ANY major food quirk - yes, especially if it is choice and not a medical imperative - throws me a bit for a loop. Especially for something like christmas where there is already so much to do and organise.
Give me time, give me information, give me reassurance of 'oh, please don't trouble yourself, I can eat crackers' and I will bend myself backwards to make an extra meal specifically for that person that is just as lush and tasty as everyone else's 'normal' meal.

Really? It's not the restrictions (religious, medical or otherwise) that piss me off.
It's the *not knowing the specifics* and so how best to make it WORK.
I get pissed off at my elder sister's weird unfathomable diets for the same reason.
Also.... well, it's Katie. Her attitude is that everyone else owes her a favour and everyone else should sort it. My younger sister has many good points. Diplomacy and practical empathy are not among her talents.
