How is everyone feeling about the new EU?
I'm digging
Evaan Verlaine from the Princess Leia comics, a rebel pilot from Alderaan who questions Leia's love of Alderaan. I'm also digging on
Shara Bey, the Rebel pilot cover-girl of the Shattered Empire comics. (Also the mother of Resistance pilot Poe Dameron. PS.
Poe Dameron.)
Wedge made an appearance in the Princess Leia comics, as well as the novel Aftermath by Chuck Wendig. (I will caution not to pick up Aftermath for Wedge appearances -- he spends the novel as a prisoner of the Imperial Remnant. There are one or two daring plans, but he generally spends the time drugged up and being carried around as a trophy.) As a side note, Aftermath also eludes to the new canon that Wedge Antilles was recruited to the Rebellion by Ahsoka Tano.

Temmin "Snap" Wexley, the Resistance pilot and tech nerd you may know as Greg Grunberg.
Jessika Pava is adorable. She made an appearance in The Force Awakens as the Resistance pilot played by Jessica Yu Li Henwick. She's described as a Luke Skywalker admirer in the new EU novel, The Weapon of the Jedi.
I'm also really stoked by the persistence of the Tierfon Yellow Aces. Whereas Janson or Porkins haven't been mentioned again, the Aces have made an appearance in Lost Stars with the Battle of Jakku, Captain Raeh Dosmit (Rey's helmet), and Jessika Pava.
There's also a fan theory proposing that Diego Luna's character may be Biggs Darklighter in Rogue One.
