Click to viewThis is about the same reaction my son has when he opens a package of Jammie Dodgers. He LOVES them. We got a few packs of the Doctor's favorite cookie from the UK for Christmas and while there is nothing like the real deal, I had to find a way to fill the Jammie Dodger void until next Christmas.
I did come across this recipe http://www.thepinkwhisk.co.uk/2012/08/jammy-dodgers.html I made them yesterday and it turned out great.
I made the raspberry caramel too but I don't think I cooked it enough because it was very runny so I put plain raspberry jam in the cookies. I think I may keep looking for a better filling for them as we really like the chewy center the real Jammies have.
