Biochem Bake-Off

Time again for the Biochemistry Dept. Art Faire and my entry into this year's dessert contest is not all that serious. I'm putting in my Prum Cake. No, it's not a typo. Prum Cake is a plum wine and rum cake made with lots of fruit. I have two varieties today, flavorful and combustible. Peak flavor in the cake comes after about 3 days of letting it mellow. The combustible version was made last night, I didn't boil out nearly as much of the alcohol and even added a bit more rum than usual. Its flavor is rather harsh, in my opinion. I'm half tempted to see if I really could do "Cake Flambé" but then, it would lower the percent ethanol, which given the nature of the afternoon crowd, is not the right approach. It's also possible that it might not ignite, which would be embarrassing. I need to make up a warning sticker that indicates that operation of heavy equipment post-consumption is not advised.
