I'm makin' cookies

Ok, so frosting cookies is hard work, even with store-bought icing and frosting tips.  The gingerbreads were fairly easy to make but I'm NOT looking forward to frosting all of them.  Gabe helped a bit so far but doesn't want to really do any more.

1/2C light molasses
1/2C white sugar
2 tsp ground ginger
1 1/2 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp allspice
1/4 tsp black pepper

Heat the above in a large pot on medium heat until just boiling, stirring infrequently. Remove from heat.  Add 1tsp baking soda and stir.  It WILL FOAM.  Stir in 1/2C butter, chopped into small pieces.  With a fork, stir in one large egg.  Add 3 1/2C all-purpose flour and mix.  Preheat oven to 325F.
Turn out dough onto a lightly floured surface and knead until dough is uniform.  Cut in half, putting half the dough in a ziplock bag.  Roll out the other half the dough until 1/4 inch thick.  Cut out shapes and place on parchment paper.  Cook 10 minutes.  Let cool completely before icing.
