Cold Sesame Spinach - Japanese Style

Ingredients

1 bunch English spinach
6 teaspoons white sesame seeds
4 teaspoons brown sugar
6 teaspoons soy sauce
1 teaspoon mirin

Method

Cut roots off spinach, and cut into halves or thirds (depending on how big you want your pieces).

Bring pot of water to boil - throw in spinach until just tender. This should take 1 - 2 minutes and the spinach will go bright green.

Pour out water and inse spinach under cold water.

For dressing, roast sesame seeds in a small pot/pan until light brown. Place sesame seeds into a mortar and pestle and grind. Add brown sugar, soy sauce and mirin and stir until dissolved.

Mix with spinach and chill in fridge until serving.
