Rocket Pesto

Thought I'd share something I whipped up the other night, motivated by a desire to get rid of a bag of rocket that came in my SydneyFresh box and inspired by a couple of recipes I found online.

It's very simple.

Ingredients
rocket leaves
walnuts
olive oil
parmesan cheese

Method
1. Toast walnuts in oven until they smell good (about 10 minutes?)
2. In food processor, blend nuts until they are crumbly.
3. Add rocket leaves and olive oil and cheese and blend some more.
4. Add more olive oil and/or parmesan until desired taste/texture.

I was very impressed with how it turned out. The sweet nuttiness of the walnuts with the salty cheese worked really well with the peppery rocket leaves (I had found them too bitter/peppery to eat on their own). It was served on top of steamed vegies and home-made fettucine. Delish!
