chorizo risotto a la meesh

made this one last night. it came out REALLY rich but tres delicious.

also i may be incredibly behind the times here but i didn't realise how simple it was to cook a risotto in a rice cooker. no more pots and pans for me! woo.

Chorizo Risotto

Ingredients:

1 onion (finely chopped)
2 cloves garlic (crushed)
1-2 chorizo sausages (sliced)
10 mushrooms (sliced)
500ml vegetable stock
Juice of 1/2 lemon
1/3-1/2 block of mersey valley cheese (crumbled up)
2 tablespoons butter
1 tablespoon olive oil
2 cups aborio rice

(you can also swap the chorizo for bacon)

Directions:
In your rice cooker, add the butter, oil, chorizo, onion, mushrooms and garlic to the rice cooker and set to cook. Seer for around 3-4 minutes.
Add rice and stock and stir in.
Replace lid and leave to cook for about 15-20 minutes (dependent on rice cooker cooking times)
When the cooker switches to warm, add cheese and lemon juice and stir in well.
Replace lid and leave for another 5 minutes or more depending on how well the stock has absorbed.
