I haven't personally made these - but I have eaten them and got the recipe off the cook. The piece of paper has been floating around my place for a while and I thought I'd type it up before I lost it:
Ingredients:
1kg almonds - blended
400g caster sugar
6 egg whites
1/2 bottle almond essence
2 tablespoons self-raising flour
2 tablespoons honey
icing sugar
Glaced cherries (cut in half).
Method:
- Preheat oven to 240C
- Blend almonds til fine and then add in SR flour
- In a separate bowl, beat egg whites until firm and glossy. Gradually add caster sugar. Beat till well mixed. Add almond essence and honey. Beat well.
- With wooden spoon, gradually add in blended almonds and mix well.
- Wiet hands in cold water and roll a small amount of mixture into a small ball. Roll into icing sugar and place on an oven tray lined with baking paper. Place cherry on top (or almond)
- Cook one tray at a time on the middle rack for approximately 20 minutes.
