a bit of a no brainer.. but i REALLY love just getting a bunch of veg together and baking it with a heap of garlic, oil (or hunks of butter if no one minds), and basil/oregano/whatever.. then serving it with a good lug of balsamic. favourite vegies to put in this mix would have to be mushrooms, zucchini, red onion, and then anything else you can muster. red onion is a must though.
also.. if you're cooking for a vegetarian that is also watching the carbs.. pumpkin and swede mash is a winner.
something that im really looking forward to finding /thinking-up a recipe for is pumpkin and sundried tomato burgers.. a cafe round the corner used to have them on their lunch menu and they were an absolute winner.
i have said winner too many times in this entry.
