I remember at school when it was all the rage to eat frozen grapes.  It was the coolest thing ever (no pun intended) one summer.  Some of my best memories of summer are spending the whole day in the pool (no really, from, like, 10am til 8pm), only coming out when Mum came out with a big platter of cool, juicy watermelon.  Yum!

And now I'm home and have my recipe book, I can post one of my (and my sister's) fave recipes!

Peach Cobbler

ingredients:

6-8 medium sized peaches (or you can use 2 big tins of peaches in juice!)
1 cup sugar
1 level tablespoon of cornflour
pinch of salt
finely grated rind of 1 lemon (optional)
1 tblsp lemon juice (I've also found this to be optional)

Topping:

1.5 cups of self raising flour
pinch of salt
1/4 cup sugar
90g butter/margarine
1 egg, beaten
1/2 cup of milk
1 level tsp caster sugar
2 level tsps cinnamon

Method:
Peel and slice peaches (you can try immersing them in boiling water for a little while, like tomatoes, but it's quite tricky - hence why I use canned peaches!!!), mix sugar, cornflour salt and lemon rind, add to peaches and fold through.  Sprinkle with lemon juice and empty into a greased, large, shallow oven proof dish (those rectangular Pyrex dishes with the plastic lids are fab for this - the 2L one is quite good).  Put in a moderate oven (180 deg) and cook until hot and bubbling, about 15min.

Prepare topping while peaches are cooking.  Sift flour, salt, sugar , rub in butter lightly, add milk to beaten egg and add to dry ingredients, making a scone type of dough.

Drop into hot bubbling mixture when it is removed from the oven.  Return to moderately hot oven (190 deg), bake until cooked and browned, about 30min.  Serve while still hot with whipped cream, custard, or ice cream.

Yumalicious!  It's also really tasty after being reheated.
