quick mini cheesecakes

I had to take a plate to a sangria night my friend Sylvia held last night. I figured everyone else would be taking savouries (skittn might post her dip recipe!) so I whipped up some little cheesecake-y things. Inspired by an old flatmate, who simply ate shortbread biscuits with cream cheese and sliced strawberries - instant gourmet!



In a bowl I mixed up 250g each spreadable cream cheese and mascarpone, juice of a lemon, some sugar, vanilla essence, and folded through 300ml whipped cream. This made HEAPS however, far too much for the biscuits and fruit quantity that I had. I used 2 packs of Paradise (formerly Westons) rich shortbread biscuits (in a red packet, about $1.20) but you'd probably need about 4 for the amount of cream cheese mix. Also, if I made this again I might have considered some jelly crystals or gelatine to help it set a little. (eta: the bowl of mix will firm up after a couple hours in the fridge, prior to spreading) But they were probably fine as they were. Passionfruit, or some fruit puree or sauce swirled through might also look good!

So, I spread some mix on each biscuit and topped with the sliced strawberries and blueberries. I sprinkled icing sugar over (I did this a couple times as it dissolved into the fruit) I recommend making this very close to the serving time as the biscuits soften, you don't want them to be too soggy and stuck to the plate!
