Banana, peanut butter and chocolate chip muffins

I adapted a recipe to make these this evening and they are so good!

Ingredients:
3 bananas mashed roughly
2 eggs
1/2 cup raw sugar
1/2 cup crunchy* peanut butter
1 3/4 cup white rice flour
2 teaspoons baking powder
1 teaspoon baking soda
1/3 cup margerine (melted)
1/2 cup skim milk
1/2 cup chocolate chips

Directions:
1) Preheat oven to 180C.
2) Mix bananas, eggs, sugar and peanut butter in a food processor (or vigorously by hand). Blend for 1 minute.
3) Combine dry ingredients in a mixing bowl. When thoroughly mixed, add to food processor/wet mix, along with the marg and milk. Blend well.
4) Add the chocolate chips and press "pulse" once or twice.
5) Ladle the batter into muffin tins lined w/ papers, filling each paper to the top. Bake for about 15 minutes, or until the muffins are firm to the touch.

This recipe made 24 small muffins, so you'd probably get 12 big ones out of it. Delicious.

* You can use smooth peanut butter if you like but the texture is nice with crunchy.
