Nut Muesli

I got this recipe from a cool Vegetarian cookbook that I was given for my birthday.

I modified the ingredients according to what I had available and what I prefer in my cereal.

Below is what I did, not exactly from the cookbook:

Ingredients
500g rolled oats
125g bran cereal
1 cup macadamia nuts, chopped
1 cup pecan nuts, chopped
(the original also had 1 cup pistachio nuts... I think you can throw in whatever you like)
125g dried apples, chopped
1/2 cup sultanas (again, add whatever dried fruit suits you)
1/2 cup maple syrup
1 tsp vanilla essence

1. Preheat oven to 180 degrees C. Mix together dry ingredients.

2. Place maple syrup and vanilla in a small pan and cook over low heat for 3 minutes or until syrup becomes runny and easy to pour.

3. Pour maple syrup over oat mixture and toss to coat. Divide mix between two non-stick baking dishes. Bake for 20 minutes or until the muesli is lightly toasted, turning frequently. Allow mixture to cool before transferring to an airtight container.

This makes approximately 1kg and makes the house smell delicious. It's really yummy with "Jalna bush honey" yoghurt and/or milk. :)

I recommend it. :)

I look forward to trying it with different combinations of fruit and nuts.

I've also padded the muesli out with puffed millet. A cereal which contains more protein and iron than any other grain. (I thought it would be good for me since I don't eat much meat. It's rather bland, but it's light and crisp...looks like tiny baby popcorn).
