My tips:
  1. Buy a free range/organic chicken if you can - I know it's a bit more expensive, but it's generally worth it.
  2. The more fat you leave on the chicken, the better it will taste - I still usually trim off the most obvious parts
  3. Add carrots for sweetness. You can also add whole onions, garlic, whole peppercorns. However, if I'm just doing a basic stock, just use the chicken and add a handful of salt.
  4. Most important tip:
  5. Boil the chicken in the water for about 45 minutes. Then seal the lid. Turn off heat. Leave the pot with the lid on overnight and the next morning you will have the softest, moistest chicken. No need to refrigerate - I was dubious, but my mum says this is what they do in Malaysia.
