pumpkin and cashew curry!

im running very low on money at the moment, so decided to do a big cook up today, it will have to last me lunch and dinner for the next 4 days. what better then a vege based curry!?

ingredients already lying around the house:
ground chili
ground cumin seeds
ground turmeric
cinamin sugar
garlic granules
salt
ground ginger
red lentils
coconut milk/cream powder

i had to buy:
butternut pumpkin
pack of salted cashews

method:
cut the pumpkin into big chunks
boil it in a good sized pot
discard some of the water (keep maybe 2/3rds)
put in half of the cashews
some red lentils
pile in the coconut cream powder and start building the sauce
ground chili, ground cumin seeds, ground turmeric, cinamin sugar, garlic granules, salt, ground ginger.

then let it simmer on a low heat for a while. eat the rest of the cashews while you wait.

it was a bit of a slap and dash affair, and if you have money then use real ingredients (chili, coconut cream, etc), it will go great with rice, toast, or as a side with some meat - for some reason i think pumpkin curry, i think lamb chops.
