NYE recipes

For NYE we were asked to bring savoury & sweet snacks, and drinks to a party. I wanted to bring something nice that I'd made, but didn't want to spend the day cooking. Also I am pregnant, so there's a long boring list of things I can't eat - however I need to snack a lot.

Guacamole: 2 avocadoes mashed, less than half a red onion diced, 2 chillis chopped finely, 5 cherry tomatoes chopped, 1 lime, half bunch coriander chopped. Served with corn chips & carrot sticks.
So easy & popular. I don't have a food processor, which many dip recipes require. Other options probably would have been something based on philly cheese, or a salsa that was just all chopped up.

Fruit skewers: We used rockmelon, grapes, pineapple, apricot, strawberries, but of course, you can use whatever is fresh & available. Squeeze lemon juice over it to prevent fruit browning. This is a great easy healthy thing for a party, would like to do this more often!
All credit goes to my partner who did the shopping and ultimately put them together as I was running late.

I didn't want to be sad about not drinking alcohol, so I went overboard on buying fruit juice & soft drink. Mocktails is a crappy word, but there's a lot to be said for a refreshing blended non-alcholic drink. I'd like to make them more often, would not be hard to have the ingredients on hand.

Baby Bellini: The recipe said 1 oz fresh lemon juice, 2 oz peach nectar, chilled apple cider. However I blended 4 yellow peaches with 1 lemon, and then couldn't be bothered squeezing any more lemons. Technically a bellini should be white peaches, but yellow work very well. Add fruit juice to your champagne glass, then cider, you may like to stir. Adding a mint leaf works nicely.

Cinderella: 1 oz fresh lemon juice, 1 oz orange juice, 1 oz pineapple juice (combine in a shaker), 2 oz ginger ale, lastly dash grenadine, and ice at some point.
For some reason I got the recipe wrong and added mango nectar as well. It was very sweet - could only have one, and ice was needed. But the generally the concept is good. Works well with vodka, I would also try tequila.
