Potato Parathas. Serves about six, depending.

4 potatoes
1 inch cube of root ginger
Handful of coriander leaves
1 onion
1 red chilli
1 teaspoon garam masala
1 teaspoon sugar

3 cups of flour
enough water to make batter

Boil and mash the potaotes, and mix them with all of the ingredients in part one, finely chopped. Split the mixture into six balls.

Mix the flour and water to make batter,and divide the batter into six. Roll it out into circular sheets, and wrap each ball of potato in a sheet of batter. Roll these flat into parathas about 1/2 inch thick, making sure that the potato doesn't escape. Dry fry these until they are a bit brown, then brush them with butter on both sides and fry them properly until they look cooked. there will be black bits in the batter. Wait for them to cool down a bit because they will be incredibly hot. Eat.
