The easiest way to describe Spirit is a "womanizing, naive, overprotective father". He really, really loves the ladies-- to the point where he's a regular at a bar that pays girls to sit around and keep lonely guys like Spirit company. He'd never, ever objectify or insult any of them, though-- he's a chivalrous pervert and flirt. It's likely that the company and well-known lines of flirtation are comforting to him; like he knows that his extramarital romances destroyed his marriage and alienated his daughter, and yet he continues to go to these places in search of feminine company and comfort.
About that destroyed marriage thing... It really goes to show that Spirit is a good guy despite his weakness for girls. He's said in canon that he really does love his wife, and there probably isn't a day that guys by that he isn't assuged with guilt over how everything fell apart. She's likely the only non-Maka woman he truly and deeply loves-- to the point where even though she's MIA somewhere in the world, he doesn't go looking for her, knowing he'd just wreck everything all over again {headcanon}. He's very kind and understanding to most people, which is what earns him the naive label-- he gives just about everyone a chance. He even continues to stay friends with Stein, his first partner at the Academy, despite knowing that Stein seems to enjoy terrorizing him and dissecting him in his sleep. (The two are really close friends; Spirit takes all of Stein's faults with a certain amount of salt.)
When it comes to Maka, his daughter, Spirit is easily seen to be a very devoted father. He's very protective, and even though Maka largely doens't want him in her life after Spirit's divorce, he continues to support her in the things she does from a reasonable distance (even if the things he does... are a bit weird). He takes his responsibilities as a parent just as seriously as he takes his responsibilites of being the most powerful Weapon known in the series, and gets very deeply offended by signs of negligence or abusive behavior in a parent or parental figure.
Spirit is also extremely expressive. He wears all his emotions out in the open. The easiest examples are when Maka says hurtful things, considering she does that to him fairly often; chances are he'll curl up in a ball and start crying and wailing right where he is, with the only intelligble word he says being his daughter's name.
tl;dr He's a nice guy with a weakness for women, who's a badass at fighting and is a total papa bear where it comes to Maka.
