Apple-Peanut Crepe Rolls

This is my own creation. It's a rough recipe, but so far my results have been pretty tasty.

1/2 c soy sauce
1/2 c water
1/8 c lemon juice
~3 T peanut oil
2 cloves garlic, minced
8 heaping small spoons sugar
4 heaping small spoons corn starch
1 1/2 t ginger powder

1 1/2 large granny smith apples, peeled and cubed, 1/4"
an equivalent amount of peanuts (1 1/3 c?)

6 large eggs
2 c flour
2 c water

peanut oil for deep-frying

Mix first eight ingredients, heat over medium heat until thickened, stirring as necessary.
Mix apple cubes and peanuts, and coat with sauce. Set aside.
Mix eggs, flour, and water to make crepe batter.
Pour a 4" circle of batter onto a skillet or crepe pan. Use a pastry brush to spread batter, making a thin crepe, about 9". Cook until completely solid.
Transfer crepe to a dish, and cover with a damp paper towel.
Repeat, making the rest of the crepes.
Spoon a dollop of apple-peanut mixture onto a crepe (about the size of a cork, to start), towards the bottom edge. Fold the two sides in, then roll it from the bottom. Repeat for all of the crepes.
Using tongs, fry the rolls in hot peanut oil.
Serve hot.

Makes about 24 rolls.
