The first and foremost part of Kim's personality is that she's an extortionist and gold digger. She came to depend on money due to past experiences and seems to come up with a fee for just about anything, whether it be rescuing another student from someone else or otherwise. If she ends up doing some sort of service for free, she constantly remarks she should make the people it effects pay her, like when the team was gathered around Jackie for heat during the battle for BREW. It seems like her ideal man would be one who's wealthy, but she could just be deluding herself into thinking that's the only reason she'll end up happy. Kim's not above taking advantage of others, often ordering another student named Hiro to get her food, most likely at his own expense.
Kim trusts no one but herself and her Weapon partner Jacqueline O'Lantern Dupré. This presumably has something to do with said past experiences, but being a minor character it hasn't been delved into very much. She's quite self-conscious, running from Shibusen when it was revealed she was a witch and fearing that her friends would scorn her despite not hearing what they thought on the matter. It seems as though she's slowly beginning to open up after the Baba Yaga fiasco, if only because she was shown how much her friends care for her when they came to rescue her from the Morality Manipulator and Arachne.
The object of Ox Ford's affections, she constantly turns him down mostly due to the fact that he's not rich but also because of his eccentric hairstyle. She seems to be a type A tsundere when it comes to him, despite how sweet he is towards her. When he proclaimed he wanted to be her place to go while fighting her under the influence of the Morality Manipulator, she seemed to break down, indicating perhaps Kim has never been close to anyone before.
As a witch, Kim is different from the other witches of Soul Eater canon. Instead of following the pull of destruction like witches usually do, Kim instead never felt the pull and leans more towards regenerative magic than destructive magic. She can heal anything from cuts to tears in cloth to hair that's been cut, but it takes a fair bit out of her due to the fact that she hasn't had the proper training. Her animal motif is raccoon/tanuki, tanukis being associated with healing in Japanese mythology, and her chant is longer than that of most witches. Regenerative magic is uncommon amongst witches, making her an outcast in both witch and Shibusen societies, which could possibly be the reason why she feels so self-conscious.

[ Other Important Facts ] :
→ Kim's magic chant is "Tanunucoon Raccooncoo n Ponpon Ponkitanu Pon Pon Pon", longer than most other witches. Presumably because of the fact that healing takes a lot out of her.
→ She can heal herself without needing to use the chant, as shown during the fight with Ox and Harvar at Baba Yaga Castle, and possibly bring herself back from the dead depending on the extent of her injuries. The latter hasn't been shown in canon though and is just mun musings.
