Hurray! I finally made a perfect London Broil. I'm mostly writing this recipe here for me to refer back to, but I thought I'd post it for anyone else who'd like to give it a shot. We don't have a real broiler, we just have an oven that only uses the top coil for broiling. I don't know how this would work in a real broiler.
(Though it seems crude) poke a series shallow holes all over your steak with a fork (on both sides) to help absorb marinade. Prepare marinade of your choice and soak overnight in the fridge.
When ready to cook:
1) Take out marinading meat and place on counter top.
2) Preheat oven to 475 degrees.
3) Pour marinade into small pot and begin reducing (keep it on a med. heat to evaporate water). Keep an eye on this in case of boil-over.
4) Prepare broiling pan (or something else that can take that kind of heat) with foil lining.
5) When oven is ready, place steak on foil, drizzle some marinade on top and put pan on top rack.
6) Cook on 1st side for five minutes.
7) Turn, drizzle more marinade and cook for six more minutes on second side.
8) Take out pan and cover steak with foil.
9) Let rest for ten minutes - With all the foil and the heat from the pan, the steak (surprisingly) won't get cold.
10) Pour remaining marinade over steak and enjoy!
