Feeling festive!

Right now I am inordinately proud of myself. I headed down to IKEA this afternoon to get a housewarming gift for a friend, and I noticed that they were already marking down all their holiday decor. Their theme this year is a bit too reliant upon oddly-shaped hearts, but they still had some great deals. So, I bought a plain wreath and lots of ( Read more... )

That's beautiful as a wreath.

Tips for pumpkin pie is to put a knife in the pie to check and see if it's set. If the knife comes out clean, your pie filling is set. If it comes out with some goopy filling still on it, put it back in for another five minutes.

Heavy pies like pumpkin bake very slowly so I almost always leave mine in for more time than recommended. They'll bake faster with good air circulation so if you have a circular pie sheet with a hole at the bottom, that's better than putting it on a flat, full baking sheet. If you use a baking sheet, you'll add another five minutes (worth it to keep from spilling pie filling on the bottom of your oven).

Yeah, I did the knife trick, and it didn't come out clean. I decided to take it out anyway rather than overcook the whole thing. I've had it in the fridge overnight, and it's not runny now. Even so, I'd like to do better when I try again tonight!

Alas, no circular pie sheet with a hole, but I'll definitely remember to use a regular baking sheet. Thanks for the tips!

If you're worried about overcooking or burning the rest of the pie (especially the crust and the pie-filling near it)? In the last ten minutes or so, make a light tent around the edge out of foil. Sort of fold some pieces in tinfoil so they form an L shape and then curve that around the outside of the pie. But only do that in the last while.

Excellent advice, and I was going to follow it, but....

The recipe said to bake for 40-50 minutes. I set my timer for 50 minutes, since the first attempt was undercooked even after an hour. I assumed this one would also need extra baking, so I was going to follow your advice after the 50:00 mark. Well, I went in to check it once the timer went off, and it was burnt around the edges! Just on one side, strangely enough, so maybe I didn't properly position it in the oven. At least the knife comes out clean when I poke the center!

Oh, and the kicker of it all? Just called the friend who invited me over, and I mentioned that I'm bringing a pumpkin pie. Turns out she bought one at the grocery store! So, mixed blessings -- the pie burnt, but I don't have to bring it anyway. ;) At least it was a fun experiment, and half of it is still edible!

ETA: Another strange thing is that it also puffed up, rather like a cake. I don't really mind, as long as it's edible!

A snuggie? For reals? Wow!

I made pumpkin pie here. The recipe was from this site. I think it was a good recipe. I've made better crust than this one but my guests really liked this pie. I served it up with homemade whipped cream. And you don't have to go all hard-core like me and massacre a pumpkin. I'm sure canned pumpkin will be fine. This was the first time I ever made pumpkin pie. It was really easy. :-)

Oooh, your pumpkin pie post is very impressive. I've already got everything for this one and don't want to brave the store again, but I'll have to remember yours for next time!

Those ornaments are a seriously good deal.

I have never attempted pumpkin pie. We fulfill the winter squash quota of Thanksgiving by having apple-butternut squash soup.

I like that they're not overly Christmas-y; if anything, all the red hearts make me feel like celebrating Valentine's Day. (I like the decor and traditions of Christmas -- "the holidays" -- but am very ambivalent about the religious aspects.) If you happen to go by there soon, they do have quite a few things in white and silver that you could probably use for decorating.

Very nice wreath and for a very nice price.

I think pumpkin pie is highly overrated although I like all other thing pumpkin. May I suggest a pumpkin cheesecake? Yum!
