I tried a vegetarian version of this
Sichuan Woodland Fire Hummus. I wanted to try this variant because I normally don't like hummus. The only hummus I liked had a ton of garlic added to it, so I wanted to see if spice would make a difference for me.
It was a bit of an experiment to make it vegetarian. Instead of fatty lamb, I used chopped up meatless meatballs. (I was going to use meatless crumbles, but they were out of them at the store.) And I didn't have time to buy Sichuan peppercorns, so I used black peppercorns with a dash if Sichimi Togarishi. The topping came out quite nicely - but I do want to see what it tastes like with Sichuan peppercorns.
By the way, my weights were off from the recipe - I ground up way less sesame than asked for (barely had 20 grams of sesame for a half recipe), but I wound up with more sesame paste than the recipe specified. Still need to debug that part.
And I forgot to toast my sesame. D'oh. Still, two thumbs up, although I really didn't like shelling all those garbanzo beans.
