Experiments in vegan baking
catintheattic suggested a couple recipes from the [Post Punk Kitchen] in response to my call for tasty vegan cookie recipes. I went with the [Chewy Chocolate Chocolate Chip Cookies] and, let me tell you, they are delicious! It's like a brownie, except it's a cookie. Awesome!
I skipped the flax seeds from the original recipe, since I don't actually have a blender or a food processor and I thought whole flax seeds in a chocolate cookie would be weird. I was slightly worried about the effect on their consistency, but they turned out fine.
The final measure of success will, of course, depend upon the library tech guys for whom I baked the cookies.
