Muffins!

eee, it finally turned crisp and cool this weekend! When I went out last night, I got to wear my peacoat! I love autumn! :D

So today, in celebration, I decided to make [  Harvest Muffins ]. Once I got down to making them, though, I was convinced they were going to be Muffins of Epic Fail. First, I realized that I did not have a peeler or a grater. (Newish kitchen, you know? There's so many things you don't think about until you need them!) But I continued bravely onwards, using a knife to peel and sort-of-not-really grate the carrot. Mostly it came out in big carrot flakes, so then I chopped those up a bit more so they weren't quite so large. So, you know, a bit extra work, but no big deal, right? And then I discovered that I don't have baking soda! D: I have baking powder but no baking soda. So I ran back to my room to do a bit of Google-fu and discovered that you can substitute baking powder for baking soda, if you double or triple the amount, which is not ideal but definitely doable.

And the muffins came out perfectly fine! \o/ And quite delicious. I think I may even prefer them with the bigger carrot chunks.

And now I have a nice big mug of maharajah passionflower tea (from fish_echo, who is keeping me spoiled and well supplied with crack tea), which is deliciously sweet-spicy and totally perfect for cool autumn evenings. :)
