I have achieved collards! Had to go with the pre-washed, pre-cut bagged stuff but, you know, given what a PITA it is to clean fresh greens, I am not complaining. I will be using
Alton Brown's recipe from the Good Eats episode
Field of Greens, which I have never tried before. But Alton is a Georgia boy, along with being a fantastic cook, so I have no doubts it will turn out OK.
That leaves what to have for supper tonight. It'll mean another trip to the grocery, but I'm having a mad craving for a cold turkey sandwich. This is usually made with Boar's Head cracked pepper mill turkey, muenster cheese, and thinly sliced granny smith apples, with a little spicy mustard and mayo. Quite tasty, yes indeed.
