While looking over my cooking links, I realized that the post with the recipe for Mom's gazpacho had somehow gotten deleted. I know that's a popular one, so I will re-post here.



1/2 cup olive oil
4tbs lemon juice
6 cups tomato juice
1/2 cup chopped onion
2 tomatoes, chopped
1/4 tsp tabasco (or to taste)
pinch of salt
1/2 tsp fresh ground black pepper
2 green peppers, chopped
2 cucumbers, chopped

Chop the veggies. Mix olive oil, lemon juice, & tomato juice. Add salt, pepper, & tabasco to liquids. Toss in blender with veggies a little at a time until ingredients are well blended and veggies have been minced fine.* Chill a minimum of 3 hours & serve cold.

*I prefer mine to be a bit chunky.
