So Aradhna and XY have asked me for the recipe to the banana chocolate fudge brownies I made the other day, and since I'm too lazy to type it out on Word and send it on tpjc.net or via MSN, I'm putting them up on my LJ for anyone who's interested!
The original recipe comes from the book Brownies, Fudges and Other Toppings I think. XY has the book. I modified it a little bit...
Ingredients:
150g butter
200g dark chocolate (I used semisweet chocolate)
3/4 cup caster sugar
3 eggs (I replaced the 3 eggs with 1 1/2 large bananas, mashed. Thus 'banana chocolate fudge'.)
1 tsp vanilla essence
1 cup plain flour, sifted
1 tsp baking powder (I didn't add this, but I read somewhere that you should use baking powder if you use fruit purees to sub for eggs, and considering my brownies didn't rise, I think you could probably add that...)
Method:
1. Preheat the oven to 180 deg. Celsius (Gas 4). Brush a 20cm square tin with oil or melted butter and line the base with baking paper.
2. Melt the butter, chocolate and sugar in a heatproof bowl, over a pan of simmering water, stirring occasionally. (Microwaving it works too, and it's a lot faster. If you're microwaving it, do it in 30-sec intervals.).
3. Remove from the heat. Add in the bananas (or beat in the eggs, 1 at a time) and the vanilla, then fold in the flour.
4. Pour into the prepared tin and bake for 35 mnutes.
5. Remove from the oven and cool in the tin before turning out and cutting into squares.
Ta-dah! There you go. It turns out really moist and VERY chocolatey. And, of course, tasting VERY banana-y. (Okay, no duh there.) I didn't like the banana taste so much, but people apparently seem to like the combination, so yeah...
