so dinner turned out pretty good. I was happy. I think it needs a little bit of modifying, so if someone wants to give that a shot, here's the original!
3 green bell peppers, cut into quarters (you can go with smaller pieces if you want)
2 lbs ground beef
1 onion, chopped
1 package Spanish rice, cooked according to package directions
1/2-1 tsp adobo seasoning
1/2-1 tsp chili powder
1 cup tomato juice
1 can Ro-Tel tomatoes
quesadilla cheese
place half the bell pepper pieces in the bottom of the crock pot. Cook the beef and onion until beef is no longer pink; drain. Add seasonings, rice, tomatoes, and tomato juice and mix thoroughly. Pour half of the beef mixture over the peppers in the crock pot. Top generously with cheese; repeat layers. Cook on low for 5-6 hours. Enjoy!
EDIT: Lance suggested Italian sausage instead of beef. In that case I would consider 86ing the seasonings and tomato juice and replacing them with spaghetti sauce, and the can of tomatoes with a can of regular diced tomatoes. Oh, and I'd replace the rice with cooked orzo or something.
