She does! She mostly sings in the shower or when drunk really loudly and obnoxiously, but if she actually tried to sing it wouldn't be as awful as many would assume. She got a lot of practice singing lullabies and nursery rhymes to little Germany, but she feels self conscious compared to Austria so if you ask her she'll either say she can't sing well or go on and on about how it's for losers and she has better things to do.
As for instruments, under Frederick the Great's rule there was a huge boom in arts and culture in Prussia so I like to see her, more so than male!Prussia, as having to go through all of the "proper lady culture lessons" that a lot of women at the time had to go through. So she was forced to dabble in literature, sewing, cooking, dancing, painting and even music all with varying degrees of success. As far as instruments go she was forced to learn the piano at the time but she absolutely hated it, and though she'll never say this was the reason, it was because she knew she could never be as good as Austria and she couldn't put the effort into it if she knew she'd always be second best. But, Fritz is well-known for composing for the flute so I think when she gave up on the piano he took over her music education directly and taught her how to play it instead. I think, like most of her mature unexpected quirks, she continues to practice in his honor and playing pieces he wrote himself calms her down when she's upset.
