Hey there! This is a really interesting idea. Generally, I've found classes with post-docs are the easiest, since their position is temporary and all they really want is a few good recommendations. Being a bad teacher will not help them garner those recs, so they're easy on the grading and more willing to experiment. So if you want easy classes, stop worrying about the prestige of a great professor and look for people further down. You end up learning better from them anyway.
Sadly, this doesn't really discriminate to a particular class, so I can't write posts on it--yet.
I think what I'll do is put these ideas on the message board, and you chaps can discuss what you think is best. After the list grows long enough, I'll start running regular posts on them.
