lol I was just thinking about all the christmas cookies my Mom used to make... and was amused at how many of the cookies that I specifically associate with this season take special equipment to make. You've got sandbakkles (molds), rosette cookies which are similar to a super thin funnel cake (special iron), those hershey bar cookies (um, cookie press maybe?), several cookies I don't know the name of, but which are probably Scandinavian in origin.

I'm beginning to think Mom just didn't like getting out the fussy cookie recipes without a special occasion. :p

When we were little, we would each get to pick two kinds of cookies that would definitely get baked at Christmas (there were sometimes others we made, but it's not like no one else brought cookies to Christmas, so sometimes not). My choices were always sandbakkles and sour cream cookies. Sour cream cookies weren't specifically a Christmas thing I don't think, but I also don't think they got made much if I didn't request them!
