Why can't I make a delicious green curry? This is the third time I've tried. The failure is worse than the first time I made it. I'll likely end up throwing this batch away, which always makes me angry. I went from way too sweet without enough spice (it tasted like a mild red curry) to having no flavor whatsoever. Unfortunately, I think the only solution is that I need to make my own green curry paste - which is a little beyond the range of my kitchen right now.
Maybe I'll go back to perfecting my pad thai. At least that recipe was seeing some improvement.
Or maybe I'll go back to my italian cookbook.
