And you know Dean starts cataloguing EVERYONE'S faces once he's got more than just Sam around all the time. (Because we all know he has an entire alphanumerical catalogue just of Sam's bitchfaces.)

Helping would get in the way of appreciating Sam. Any random person could help; Gabriel is special.
“Is it the all-powerful angel you want, Dean? or the human you think you will make of me?”
Oh, Cas. I love you so, but prompting your boyfriend to choose between two hideously wrong answers? Even someone who's much better at expressing emotions and sorting out issues than Dean Winchester might not make it through those clashing rocks. I think the answer is, "I want whatever the hell you are," but with Castiel, who knows?
I just love all the relationships, especially the cross-couple cross-species relationships. All the relationships have similarities and differences, but if you want Great Big Leaping Contrasts, Dean&Gabriel vs Sam&Castiel is the way to go. I love the glorious clashes of Dean/Gabriel, and I could watch Castiel and Sam be subtly nice to each other all day. Every step of the way.

Oh, I just bet Castiel is touchy about what he is and what Dean might make of him, even -- especially -- without meaning to. Those issues are canon. And Castiel is trying to give a warning, like Tara in BtVS: he's afraid that if Dean uses that power to shape him, there'll be nothing left of him. While in some ways Dean may never be sure he's worthy of Castiel's notice.
No cat can bear to be laughed at, right? And Castiel has some of that feline offended dignity, along with the stare, the inhuman eye color, and the sudden silent presence in your face.

Gabriel always has fun watching (and mocking) the awkwardness! Up until the point where it gets serious and suddenly OH NO FAMILY ARGUMENTS ALERT *panicmustfix*.
(At least he stops by the 'must fix' instinct now before hitting the 'run away' one.)
I'm glad you think Castiel works. :) Out of the four of them, he was the onet hat I took longest to feel like I 'got' as an author, although, when watching the show, he was the first one who really drew me in (sorry, Sam and Dean).
