Hi, my name is Tiffani and I was newly diganosed with SEVERAL food allergies.The laundry list includes:

Peanuts and all of its derivatives
Tomatos and all of its derivatives
Soybeans and all of its derivatives
Corn and all of its derivatives
Potatoes and all of its derivatives

i share these with you:
Tomatoes and all of its derivatives
Strawberries
Wheat
Oats

plus dairy, meat (except for fresh fish, occasionally), sugar, mushrooms, raw spinach.

also i try to avoid peanuts and almonds, but i dont always do the best job.

anyway, its been almost 3 months since implementing these changes,
mostly the way i eat now is based on seasonal local produce. and spices, herbs, and sauces that are still ok (kicking out sugar has wiped out like 90% of condiments) i reccommend umeboshi (or ume plum) vinegar to salt vegetables and make them more interesting (a salad or steamed veggies with umeboshi is killer. add sesame seeds or gomaiso or 'eden shake' and its like heaven.)
i cook with coconut oil. i use a lot more coconut products (i drink the coconut water with cardamom, so yum. i add cream of coconut to shakes. coconut milk with greens like swiss chard, and ginger and red pepper makes delicious soup... i also use shredded coconut and coconut flour for lots of things)
i often eat seaweed as a vegetable. pan-toasted laver is good in place of chips, its salty and tastes good with guacamole or salsa, or hummus... nori is just as good, i think they come from the same type of seaweed. i add nori to soups and salads, too. i make a lot of soups, that way you can just toss a bunch of veggies together with buillion or just spices you like, and its tastier and more filling than the veggies alone would be. beans + rice. rice cakes!!! some rice breads. sushi! most non-american style restaurants will have some options, you just have to ask questions. indian places, besides in naan, usually make use of lentil flour, like in dosa. mexican food, you can always get no tortillas and no tomatoes. but you have to ask about corn or soy oils being cooked in, wherever you go. i bring my own wheat-free tamari when i go out for sushi. i suggest bringing sauces you know you can eat out with you when you eat, as you can always order things steamed or grilled plain (or with lemon juice) and add your favorite sauces to make it all delicious.
dried/dehydrated fruits (bananas, mangoes, persimmons, etc) with pumpkin seeds, pecans, sunflower seeds... these keep me going all day. i am constantly having a handful of a dry mix, or eating fresh fruits, between meals, since what i eat for meals is generally less filling than what i used to eat. snacking keeps me from feeling like i'm starving, which keeps me from feeling deprived. if i let myself get too hungry, i almost always want something i'm not supposed to eat.

look for flours made of almond, coconut, tapioca, lentil. try elanaspantry.com as i think she cooks similarly to how you'll eat. you may always have to think of your own substitutions, but you will, and it gets easier and easier and you feel better and better. at first i felt like oh no! like what can i eat!? but then i realized i can eat so many things and enjoy them so fully and be more creative and excited about new things. today i went spice-wild at my local health food store's bulk herb section. herbs, spices, dried flowers, seeds, so many things, and using them will make the foods i eat all the time become new again, alive with different flavors.
