If it's a large crock (6 quart), you can actually put a small (thawed, not frozen) turkey breast in there and cook it. You use pretty much the same recipe as if you were roasting it in the oven, but cook on low for 8 hours/overnight. That's yummy, and you can then use the leftovers for making soup!
Fair warning-You may have to split the breast or trim off the narrow edges to get it to fit; I BARELY got a 5 pound breast to fit in one piece in my 6qt pot. And I had to sort of lay it on its side to get it to fit! But it tasted GREAT.
Do you put anything else in with the turkey? Or just plunk the piece of raw meat in there all by itself? And I'm assuming you weren't referring to those boneless turkey breasts? So the same should work with a whole chicken (with bones)?

I've done up turkey and stuffing in the crock. Here's what I did:
I used mustard seed, garlic, sage, parsley, oregano and ground pepper on the meat, and then seared it in a pan (searing makes for great flavor!). After searing, I tossed it in a buttered crock pot with lemon juice and 1/2 cup of dry white wine. Cooked on high in the crock pot for 2 hours, then I prepped the stuffing (per the box/bag instructions) and tossed it on top of the meat to cook for another 2 hours.
