We had a late Thanksgiving dinner so I'm a bit late with this in that scope but it's still yummy.
Ingredients/Tools:
2.5 qt crockpot
Turkey, about a pound cut up- this would work with ham or roast too
5 small to medium Butter potatoes (any kind would do, I like these because they aren't as starchy) cut to bite sized bits
Leeks, two- all chopped up
Corn- 1 bag frozen, or whatever left over veggies you have
Stock to cover (I made my own from the bird bones and such, but I think any would do)
1 can cream of --- soup. I used mushroom
garlic, pepper, sea salt, Italian herb blend to taste
I put in all the ingredients in, set it on low for 7 hours and served with leftover rolls.
So easy, very tasty and one more way to use the left-overs! :)
