I recently had a taste for chicken and pastry, mostly because the weather has gotten cooler here. but mostly cause it's yummy. Anywho i decided to try it in the crock pot, so i looked here and at other online recipes, finally deciding that it should be doable. i started with 3 large bone in chicken breasts cause that's what i had in the freezer. i added a thinly sliced onion and some cut up celery. i added a bit of salt, pepper, thyme, and garlic. then added chicken stock up to about halfway the chicken. i did NOT cover it with stock. then on low for about 10 hours. can i just say this was the best chicken breast i have had in like forever?? tender, juicy and yummy. wasn't dry as i was worried it might be. the problem came when i tried adding frozen dumplings to a crock...let me tell ya it didn't work. (it basically turned to mush) next time i will know to transfer the broth to a pot and cook it on the stove, but i will try it again. anywho just wanted to share...and if anyone here has a better idea (for the dumpling part, other than handmade which i just know i wouldn't do although i am sure it would be awesome!) let me know. thanks:)
