I just made a chicken in my crock today. DELISH! Since I work all day (sometimes two jobs) and go to the gym, I'm a big fan of "set it and forget it" recipes that are forgiving with time. Super simple, and so tasty! The best part about these is that my kitchen usually smells good for a few days. :)
Super Simple Chicken:
Ingredients:
1 whole chicken (giblets removed, drained of excess juices)
4 large potatoes, cut into eighths
Kosher salt, pepper, rosemary
Directions:
Place the cut potatoes in the bottom of your crock. Rub salt, pepper, and rosemary over chicken. Place breast side down over potatoes. Set on low, go to work, come home to a tasty smelling kitchen!

If you live alone like me, this yields a LOT of chicken. So, I eat the legs and wings with the potatoes for a couple dinners (I LOVE THE POTATOES), then debone the rest of it. I use the bones and the liquid to make stock (freeze that) and the rest to make chicken salad. In case anyone was curious for a new chicken salad recipe, here's what I do:
Combine shredded chicken with mayo, spicy brown mustard, craisins (or raisins), dill relish, garlic powder, parsley, and black pepper. Tastes great on a wrap with some feta cheese, lettuce, and sunflower seeds for crunch!
