Last week I posted a request for fish recipes, and I thought I would share the results (since I had doubts as did others)...
The recipe was posted in the comments thread, and was real simple: On a piece of foil, lay the fish. Spoon pesto onto the fish (about a tablespoon's worth). Sprinkle with parmesan cheese (enough to your liking, I put about two tablespoon's worth). Wrap the fish in the foil into a loose packet. Layer in crock pot. Do NOT add water. Cook on low. My boyfriend and I flipped on a movie, and at the end of the movie we checked on it, and determined it was done (almost two hours).
This was the most incredible tasting, most moist fish I had ever had. Flaky and flavorful. The apartment did not smell like fish, but it smelled like the pesto, and because it cooked in the foil, not even a pot to clean. Most excellent. Thank you for the recipe!
