Going from Oven to the crock

My grandmother makes a dish called 7-layer Dinner and I want to try and make it in the crock.

For the oven in a roasting dish you put a layers of sliced potatos, carrots, onion, a can of tomato soup and a can of plain water, a cup of rice and a can of green peas, and breakfast sausage. Salt and pepper to taste. I don't know how long I bake it for, I just put it in the oven at 350 and start for a half hour and keep checking until the sausages and potatoes and carrots are done.

Is this something that can be done for a crock? and how high should I cook it. I just have a 2qt crock, should I keep it on high all day? Last time I made a stew with potatoes they weren't done after about 11 hours on low.

Any suggestions?
