Leftover Turkey

I made a 7lb turkey breast in the crock pot for dinner last night. I found a bunch of recipes that said to cook it for 7 - 8 hours. I cooked it for about 6 1/2, which overcooked it, drying it out. I have about 2lbs or so of meat left.

Any recipes I can use this in? Something that will maybe make it moist. If not, it will go to the dogs.

I dont have a working oven right now, so something on stove top or crock pot, please.
