I just did a beef stew (basically the same thing except I cut up the beef), and added some brown sugar and apple cider vinegar. It came out kind of tangy, but I liked it.

I haven't tried this myself but I've heard that people really enjoy pot roast cooked in soda pop:

I throw it in with veggies, 1 cup of water and a can of cream of mushroom.

Take the ingredients you listed and throw it all in the crock pot with two cans of any "cream of" soup (I use one celery and one mushroom) then two cans worth of water. Cook on low 6-8 hours or high 4-6 hours.

When mine is done I like to take the meat and veggies out and then use flour to thicken the water/soup/juices into gravy. YUM.

Hmmm, I've never tried a can of cream soup with a roast before. I'll do that next time. I always use a packet of dried soup mix and about 1/3 cup water or broth. And I also throw parsnips, brussel sprouts and whole mushrooms in with the carrots, onions and potatoes. I like tons of veggies in mine.

Brussel sprouts!? Hmm, I haven't thought about putting those in before. I bet they are super yummy.
