2 day crockpot

so yesterday we had a roast in the crockpot.

about a 1.5 pound cheap beaf roast...chuck maybe? it'd been in the freezer a while.
half a large bag of baby carrots
2 cans beef stock + 1 can water
a couple soupspoons worth of chopped garlic (we get the prechopped garlic in a jar)
a "box" of fresh mushrooms (just the white ones)

put everything but the carrots and mushrooms in, and cooked on low for about 8 hours, then put in the carrots and mushrooms, cooked on high for another hour or so. (the roast started out frozen)

it was good! i felt like warmed over death, though, so i went to bed early, trusting that my wonderful hubby would put things away!.....not so much.

this morning the crockpot had been left on warm all night long, and everything was still pretty hot. hmm....there's about 2.5 inches of liquid in there, a piece of roast about 2 oz worth, a few carrots, a couple of mushrooms. *think think think*

so i toss in the remainder of the carrots (about a 1/3 of the bag, i snacked on some of the others yesterday) quartered the mushrooms i had left (another whole box....the little pint? boxes you get at the grocery) and added them, mushed up the piece of roast still in there, added 5 or 7 beef bullion cubes. cooked it on high for about 2 hours.

and lunch is served! so its chunksy soup, made about one large bowlful. the carrots were interesting, they probably could have been cooked longer, but some were REALLY soft because they were from yesterday.

i say two thumbs up!
