Ok. So I've been following this community for some time now. It's been quite interesting. Usually when I crockpot, I don't quite have everything I need, so I attempt substitutes. Sometimes it works, sometimes it fails horribly. I'm gonna give you a success story (in my opinion).
BBQ chicken experiment:
2 large chicken breasts
1 cup Lemonade
1 cup Pepsi
1/3 of a bottle of spicy bbq sauce.
1 onion, chopped.
Spices to taste
I chopped the chicken breasts into cubes (it was still a little frozen so cubes were easy). and spiced them with some cayenne and garlic. In the crock pot I put the chicken, the liquids and the chopped onion. I also threw in some cooked bacon I had around (though I don't think it added anything). A little bit of garlic, and other spices I like (sorry I don't have amounts, but it really was just "sprinkle some of this, some of that"). and cooked it for 8 hours on low.
Since I wasn't home for this, I had to drain a bunch of water when I got back, but what was left was an interesting chicken creation, which was similar to pulled pork. Very sweet, but with a spicy kick. It was literally made because I saw all these pulled pork and chicken recipes and I wanted to try, but of course had none of the ingredients except sauce and chicken. The lemonade and pepsi were my acids which helped break down the chicken.
I'm quite enjoying it, and so I thought I'd tell the group.
