Yesterday: Crock-Pot Cacciatore, on the Cheap

Did this in the crock yesterday, as Wednesday is one of my 15-hour days and I am working on crocking to avoid the drive-thru when I get home at 10pm.

Ingredients
2 frozen boneless, skinless chicken breasts
1 can Hunts garlic and herb spaghetti sauce
1/2 white onion, chopped
1 heaping tablespoon minced garlic
1 5-oz can sliced mushrooms
Italian seasoning (about two palms full)
Red pepper flakes (palm ful)
Oregano (palm full)
Black pepper to taste

Put the veggies into the bottom of the crock
Place chicken breasts on top
Add seasonings
Pour spaghetti sauce over all

Cover and cook. I did it on low for about 5 hours, then my partner kicked it up to high for another 4 or so when she got home. If you start with thawed chicken, you probably don't need to cook it as long.

Serve over whole wheat pastas with asiago, parmesean, or whatever cheese you like.

This was very good, if a bit salty. I'm going to try it with a higher-quality spaghetti sauce next time and see if that changes it.
