arroz con pollo

I ventured forth and found a crock pot recipe for arroz con pollo:

I liked it.  My family didn't.  But my family hates new things, so don't take their opinion on it.

I didn't have any long grain converted rice, so I used the brown rice I had on hand.  It came out kind of gloppy, but it didn't affect the taste.  It could have used more flavor, more garlic or tabasco or adobo seasonings.

And... every time I make a crock pot meal with chicken, everything falls off the bone because it gets so tender.  EVERYTHING falls off the bone, including smaller bones and the ligaments or whatever else is part of the chicken.  Then I have to pick it all out of the rice or risk accidentally biting it.  How do I prevent that?
