Cooking times- egg casserole

Has anyone made this or anything like it? I'm wondering if I can cook it for 6-8 on low and have it come out fine? I'd really rather do it overnight instead of during the day. I think I have a bigger crock pot that that though.

I've heard that whole eggs don't do well on the longer cooking times, but I use the egg-whites-only that come in cartons and they work perfectly in the crock pot. So if you changed to that, maybe ...

I make something similar to that often enough. But I do mine in layers with hash brown potatoes, peppers, onions and chopped bacon, then cover it in a mix of eggs and milk. It cooks fine overnight and puffs up nicely. It's never runny and everything in it is cooked. In fact, I did it on Christmas Eve so I wouldn't have to make breaky on Christmas Day.

ooooh! That sounds really good. Do you have a recipe or something? I've never made hash browns. Do you saute the peppers and onions and such and then just throw them in there? How much eggs and milk?

Here's what I make. I've made it anytime I want to have breakfast just appear (most notably on my wedding day for the brunch buffet I hosted before the ceremony for family)

1 bag (32 oz) frozen hash brown potatoes (still frozen)
1 onion, diced
1 green pepper, diced (you can use red too. I did 'cause I hate green pepper)
1 lb. bacon chopped
1 1/2 cup shredded cheddar cheese (or Monterrey Jack. It's in the recipe, but I've never tried the Jack cheese, just cheddar)
1 dozen eggs
1 cup milk
salt and pepper to taste

Place a layer of frozen potatoes in the bottom of the crock, then a layer of bacon, then onion, green pepper and cheese. Repeat the layering process two or three more times until, ending with a layer of cheese.

In a bowl, beat the eggs, milk and salt and pepper together. Pour over the crockpot mixture, cover and cook on low for 12 hours (overnight).
