Hey gang, I've got an uncooked pork shoulder in the freezer that I need to use up that has about half the meat cut off with the bone exposed. We had that other meat carved off so we can make sausages with it.
Anyway, we have 2 bunches of collard greens from the CSA and I'm wondering how the pork shoulder would taste with them. I would still throw some ham slices in there for good measure for the smoky taste but would this all come out alright? Should I use a regular collard greens recipe? Do y'all have any that you love and would be willing to pass on to me? I'm thinking this one might be good:

Well, I guess I should say this is not supposed to be an exclusively "collard greens dish". It's more like "pork shoulder with some greens in there". Oh, and we're going to throw in some kale as well, according to my boyfriend. Does that change the equation at all?
Thanks so much.
